Beet Ginger White Bean Soup

Ingredients

  • 1 TBSP coconut oil
  • 3 TBSP fresh ginger, minced
  • 4 garlic cloves, minced
  • 1 sweet yellow onion, chopped
  • 6 small beets, chopped
  • 2 apples, chopped
  • 8 C vegetable broth
  • Salt and pepper to taste
  • 1 can white beans like cannellini, drained
  • 4 limes, juiced
  • 1 14 oz can full fat coconut milk

Preparation

  1. Heat coconut oil in a dutch oven over low heat. Add onion, garlic, and ginger and sauté until translucent and fragrant, about 4-5 minutes.

  2. Add beets and apples. Pour in broth and seasonings and bring to a boil. Reduce heat and let simmer for 20-25 minutes until beets are tender.

  3. Add white beans, lime juice, and coconut milk and stir to combine. Use an immersion blender to puree until smooth or blend in batches in a blender.
