Beet Ginger White Bean Soup
Ingredients
- 1 TBSP coconut oil
- 3 TBSP fresh ginger, minced
- 4 garlic cloves, minced
- 1 sweet yellow onion, chopped
- 6 small beets, chopped
- 2 apples, chopped
- 8 C vegetable broth
- Salt and pepper to taste
- 1 can white beans like cannellini, drained
- 4 limes, juiced
- 1 14 oz can full fat coconut milk
Preparation
Heat coconut oil in a dutch oven over low heat. Add onion, garlic, and ginger and sauté until translucent and fragrant, about 4-5 minutes.
Add beets and apples. Pour in broth and seasonings and bring to a boil. Reduce heat and let simmer for 20-25 minutes until beets are tender.
Add white beans, lime juice, and coconut milk and stir to combine. Use an immersion blender to puree until smooth or blend in batches in a blender.
