Chicken Soup

Ingredients

  • * 10 oz pasta of your choice
  • * 2 boxes of vegetable broth
  • * 2 cups of water
  • * 3-4 celery stalks
  • * 1 small onion
  • * 3 carrots
  • * 1 packet of @the_tofurky_company chick’n
  • * 1 tsp Italian seasoning
  • * 2 tbsp olive oil
  • * salt and pepper to taste
  • ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • You will need: large pot, pan

Preparation

  1. Add two boxes of vegetable stock (8 cups) to the pot and turn on high heat until it boils

  2. While waiting for pot to boil, chop onion, celery and carrots. Turn pan on medium-high heat and add 1 tbsp oil to sauté onion and celery

  3. Add carrots once vegetable broth begins to boil and turn down to a simmer. Simmer for 5 minutes and then add pasta, chick’n and two cups of water. Season with Italian seasoning, salt, pepper and simmer for 15 minutes

  4. Add celery and onions to the pot after the 15 minutes is up. Add an extra tbsp of oil to the soup if you’d like it to be closer to chicken soup
