Creamy Vegan Broccoli Soup
Ingredients
- 250g broccoli
- 2 grated carrots
- 2 cubed potatoes
- 1 leek
- 1 garlic clove
- 150g cooked chickpeas
- Vegetable broth or hot water
- Salt and pepper to taste
- Olive oil (a little for sautéing)
For serving
- A drizzle of extra virgin olive oil
- Vegan parmesan
Preparation
Sauté the garlic, leek, and carrots in a little olive oil.
Add the potatoes, broccoli, and chickpeas.
Pour in vegetable broth or hot water to cover the ingredients.
Season with salt and pepper and cook for about 20 minutes.
Finish with a drizzle of olive oil and vegan parmesan before serving.

Serve with whole grain bread or toast for a special touch.
