Hearty and Spicy Vegetarian Bean Chili
Ingredients
- 1 large onion, chopped
- 3 cloves garlic, grated
- 2 tbsp olive oil
- 3 teaspoons ground coriander
- 3 teaspoons ground cinnamon
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 tablespoons tomato puree
- 2 cans chopped tomatoes
- 1 can chickpeas
- 1 can cannelini beans
- 2 cans red kidney beans
- 1/2 - 1 teaspoon crushed chilli flakes
- 1 veg stock cube
- Salt
- Fresh coriander and spring onion to serve
Preparation
Put a large pan over a medium heat and cook the onion in the olive oil for about ten minutes
Add the garlic and cook for another couple of minutes
Add the ground spices and cook for another minute or so stirring constantly so they don’t burn
Add the tomato puree and cook for another minute
Pour in the chopped tomatoes, fill both cans with water and pour that in too
Add the chickpeas, kidney beans, stock cube and chilli and bring to a gentle boil
Lower the heat to a simmer and let it cook for about an hour till reduced; stir occasionally
Season to taste
Serve with rice, smashed avocado and tortilla chips
Serving suggestions
Can also be served with cornbread or over jacket potatoes topped with cheese for added comfort
