Khichdi Served

Ingredients

  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 large courgette, chopped
  • 1 large garlic clove, chopped
  • 1 tsp ginger paste
  • 2 tsp curry powder
  • 1 tsp mixed herbs
  • 1/2 tsp chilli flakes
  • 1 tsp turmeric
  • A pinch of salt and pepper
  • 1 and 1/4 cup rice
  • 3/4 cup red lentils, soaked in hot water for 15 minutes
  • 5 cups water (you may need some extra)

Preparation

  1. Add the onion, carrots and courgette to a large pan and cook until they are starting to brown

  2. Add the ginger, spices, herbs and salt and pepper to the pan and mix in. Cook for a minute

  3. Add the rice to the pan and cook for 3-4 minutes, stir regularly

  4. Add the lentils and water to the pan and leave to simmer for 20-30 minutes. You may need to add some more water to the pan and stir a couple of times
