Khichdi Served
Ingredients
- 1 onion, chopped
- 2 carrots, chopped
- 1 large courgette, chopped
- 1 large garlic clove, chopped
- 1 tsp ginger paste
- 2 tsp curry powder
- 1 tsp mixed herbs
- 1/2 tsp chilli flakes
- 1 tsp turmeric
- A pinch of salt and pepper
- 1 and 1/4 cup rice
- 3/4 cup red lentils, soaked in hot water for 15 minutes
- 5 cups water (you may need some extra)
Preparation
Add the onion, carrots and courgette to a large pan and cook until they are starting to brown
Add the ginger, spices, herbs and salt and pepper to the pan and mix in. Cook for a minute
Add the rice to the pan and cook for 3-4 minutes, stir regularly
Add the lentils and water to the pan and leave to simmer for 20-30 minutes. You may need to add some more water to the pan and stir a couple of times
