Oil-Free Broccoli and Chickpeas in Cashew White Sauce

Ingredients

  • 3 cups steamed broccoli florets
  • 2 cups cooked chickpeas

White sauce

  • 1 cup soaked cashews
  • 1/3 cup nutritional yeast
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground white pepper
  • 1 1/2 cups water
  • salt to taste

Preparation

  1. Add 1 cup raw cashews to a small saucepan with enough water to cover by 2 inches

  2. Bring to a boil then remove from heat and let soak for 15 minutes

  3. Blanch 3 cups broccoli florets by boiling for a couple of minutes and then running under cold water

  4. Blend the soaked cashews nutritional yeast garlic powder onion powder white pepper and 1 1/2 cups water until smooth

  5. Add salt to taste to the sauce

  6. Heat the sauce in a large saucepan until it just starts to thicken

  7. Mix in the cooked chickpeas and steamed broccoli florets

  8. Cook until heated through

  9. Serve with pasta
