Chicken Flavoured Meatballs and Pasta

Ingredients

  • 1 can chickpeas
  • 1/4 cup sunflower seeds
  • 1 cup of oats
  • 1 tablespoon of miso paste
  • mustard
  • poultry seasoning
  • salt and pepper
  • combine ingredients in a food processor
  • bake in the air fryer for about 20 minutes, then fry on a pan until seared
  • sauce
  • 1/2l veggie stock
  • 1 cup coconut milk

Preparation

  1. Combine ingredients in a food processor

  2. Bake in the air fryer for about 20 minutes, then fry on a pan until seared

  3. Cook onions in a large pot until translucent

  4. Add some soy sauce and balsamic vinegar and deglaze the pan. Add chickpea flour and stir

  5. Add stock, pasta, coconut cream and seasonings. Cover and cook for 20 minutes

  6. Remove lid, add meatballs and cook uncovered for another 15 minutes letting the sauce reduce

  7. Serve with parsley
