Crispy Avocado Spring Rolls
Ingredients
- 3 medium-sized ripe avocados, seeded and mashed
- 1/3 cup chopped green onions
- 1 jalapeño, seeded and diced
- 3 tbsp chopped cilantro
- 8-10 spring roll pastry dough wrappers
- 1 cup oil for frying or air frying
Preparation
In a bowl, combine chopped green onions, diced jalapeño, and chopped cilantro with the mashed avocados.
If using a frying pan or wok, heat the oil over medium heat. If using an air fryer, skip this step.
To assemble the spring rolls, place a spoonful of the avocado mixture in the center of each spring roll wrapper.
Moisten the edges of the wrapper with water using your finger.
Fold the bottom edge of the wrapper over the filling, then fold in the sides and roll tightly to seal the roll.
Repeat the process until all the wrappers are filled and rolled.
If frying, cook the spring rolls in oil for about 2 minutes on each side until they turn golden brown. If air frying, cook at 390°F (200°C) for 15 minutes, flipping the rolls halfway through.
Use metal tongs to remove the spring rolls from the oil or air fryer and place them on a plate lined with paper towels to absorb excess oil.
Serve the crispy avocado spring rolls immediately with your favorite dipping sauce.
