Baked Apple Ring Donuts

Ingredients

  • 1 apple
  • 2 heaping tablespoons almond meal
  • 1 teaspoon cinnamon
  • 1 teaspoon coconut sugar
  • 1.5 tablespoons melted coconut oil

Preparation

  1. Preheat oven to 350 F.

  2. Peel, core, and slice the apple into rings

  3. Combine the cinnamon and sugar with almond meal in a shallow dish.

  4. Dip the apple slices in melted coconut oil and then dredge through almond meal mixture, making sure both sides are covered.

  5. Place slices on a parchment paper lined baking sheet and set in middle of oven.

  6. After 20 minutes, flip slices and bake an additional 20 minutes more.
