Banana Bread

Ingredients

  • 75g self raising flour
  • 50g oats
  • 2 bananas
  • 2 heaped tbsp peanut butter
  • 2 tbsp pecans (or any nuts)
  • 1 tsp baking powder
  • 3 tbsp maple syrup

Preparation

  1. Pre heat oven to 180C/ 350F/ Gas Mark 4

  2. Mix butter and syrup in a large bowl until smooth

  3. Crack in the eggs/ vegan egg and mix

  4. Add mashed banana and pecans and stir in with a spoon

  5. Sift in the flour, oats and baking powder and stir in lightly with a spoon

  6. Pour mix into a lined/ greaseproof 1 lb loaf tin (or any tin) and bake for 15-20 mins until a knife comes out clean when you prod it and it’s golden on top

  7. Slice and serve warm or cold with yogurt and maple syrup

  8. Vegan buttermilk: 50ml (1/4 cup) soya or almond milk, 1 tbsp lemon juice. Add lemon juice to milk, stir and leave for 5 minutes to curdle.2. Add to baking recipes as usual when an egg is required
