Banana Muffins

Ingredients

  • 1 cup nut butter – i used @justins almond butter
  • 2 medium sized bananas (the more ripe, the sweeter!)
  • 2 large eggs
  • 1 teaspoon vanilla * 1/2 tsp of cinnamon * 2 tablespoons of raw honey(or other sweeteners such as maple syrup, stevia, etc.) i actually didn't use any this time because i didn't have any. * 1/2 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • 2tbsp of chia seeds * toppings: dehydrated unsweetened coconut flakes, raisins,dark chocolate chips, cinnamon, walnuts, and/or anything else you can think of. i used @enjoylifefoods semi sweet chocolate chunks

Preparation

  1. Preheat oven to 350 degrees f

  2. Place all ingredients into a bowl and combine

  3. You can use a hand mixer or blender

  4. Blend until well mixed

  5. Pour batter into a greased muffin tin

  6. Or use muffin cups

  7. You can also use a mini muffin tin to make 24 mini muffins

  8. Add additional toppings of your choice

  9. Cook time: 15 minutes for full size muffins and 10 minutes for mini muffins
