Berry Delicious Banana Bread
Ingredients
- 230g plain flour (gf for low-fodmap)
- 100g white sugar
- 50g brown sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 medium ripe bananas, mashed
- 2 large eggs
- 100g melted unsalted butter
- 1 cup chocolate chips
- 1/4 cup blueberries
- handful raisins (optional)
- pinch of salt
Preparation
Preheat oven to 180degrees
Mix together flour, sugars, baking soda and cinnamon in a large bowl
In a separate bowl, mix mashed bananas ? , eggs ? and melted butter
Make sure the butter cools before mixing in frige
Fold the wet ingredients into the dry ingredients to combine
Mix in half of the chocolate chips, all the raisins and blueberries
The mixture should be thick
Pour the mix into a lined or greased loaf tin
Top with the remaining chocolate chips
Bake in the oven for approx
Minutes, or until the bread is golden
Test that it’s ready by putting a toothpick or fork gently into the middle of the loaf and when the cake is ready, it’ll come out clean
Leave to cool before slicing up and slathering with peanut butter (obvs)
Bake this weekend to brighten up your snack time next week
