Blender Butterscotch Blondie Bars
Ingredients
Butterscotch
- 4 tbsp vegan butter
- 1/2 cup brown sugar (packed)
- 1 tsp flaky sea salt
- 1/2 cup coconut cream
- 1 tsp vanilla extract
Base
- 1 1/2 cups oat flour
- 1/2 cup brown sugar
- 1 tbsp flax seed meal
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup melted coconut oil
- 1/4 cup creamy nut butter
- 6 tbsp non-dairy milk
Preparation
Preheat the oven to 350 degrees. Line an 8x8 pan with parchment.
Melt the vegan butter. Add brown sugar, flaky sea salt, and coconut cream. Whisk until creamy.
Bring the mixture to a low boil and boil for 4-5 minutes. Remove from heat and stir in the vanilla extract.
Allow the butterscotch mixture to come to room temperature, then refrigerate it while preparing the rest of the recipe.
In a blender (such as the @beko 68 oz. Power Blender), combine all the base ingredients for the blondie. Blend until creamy and well combined.
Pour and spread the batter into the prepared baking pan.
Pour over 3/4 of the prepared butterscotch mixture. Swirl it gently using a knife.
Bake the blondie bars for 25 minutes in the preheated oven.
Allow the bars to cool for about 8 minutes before slicing them into squares.
