Blueberry Cheesecake French Toast Sandwich
Ingredients
- A large handful of frozen or fresh blueberries
- 2 slices of wholemeal bread
- 3 tbsp milk
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 30g light cream cheese
- 1 tsp maple syrup
Preparation
Place your blueberries in a pan with a splash of water and stew until soft and of a thick consistency
Mix your light cream cheese with 1 tsp of maple syrup and leave to one side
Meanwhile whisk your milk, egg, vanilla extract and cinnamon in a container large enough to fit a slice of bread
Preheat a frying pan over a medium-high heat and grease with a little coconut oil
Soak each piece of bread for a few seconds in the egg mixture and cook for 3-4 minutes on each side until golden
Spread your cream cheese and a dollop of the stewed blueberries across one of the slices and make a sandwich with the other slice
Cut in half, drizzle with maple syrup, more blueberries and enjoy!
