Blueberry Cheesecake French Toast Sandwich

Ingredients

  • A large handful of frozen or fresh blueberries
  • 2 slices of wholemeal bread
  • 3 tbsp milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 30g light cream cheese
  • 1 tsp maple syrup

Preparation

  1. Place your blueberries in a pan with a splash of water and stew until soft and of a thick consistency

  2. Mix your light cream cheese with 1 tsp of maple syrup and leave to one side

  3. Meanwhile whisk your milk, egg, vanilla extract and cinnamon in a container large enough to fit a slice of bread

  4. Preheat a frying pan over a medium-high heat and grease with a little coconut oil

  5. Soak each piece of bread for a few seconds in the egg mixture and cook for 3-4 minutes on each side until golden

  6. Spread your cream cheese and a dollop of the stewed blueberries across one of the slices and make a sandwich with the other slice

  7. Cut in half, drizzle with maple syrup, more blueberries and enjoy!
