Cauliflower Crust Rainbow Pizza

Ingredients

  • 2 packs cauliflower rice @fullgreen.official (400g)
  • ?1 whole egg & 1 egg yolk
  • ?1/4 cup nutritional yeast
  • ?1/2 cup grated mozzarella & 1/2 cup grated protein cheese (you can use 1 cup of any grated cheese you prefer)
  • ?1 tspn oregano
  • ?1 tspn dried basil (if you have fresh chop it in)
  • ?1/4 tspn fine black pepper

Preparation

  1. Preheat oven to 250C the hotter the better

  2. Mix all the ingredients well in a mixing bowl

  3. Place a sheet of baking paper on an oven tray

  4. Empty bowl contents into the centre of your baking tray

  5. Pat down using your hands to flatten and form the round base - the thinner the better

  6. Press down some kitchen roll to soak up the excess water - you may need 4-6 sheets

  7. Switch oven to high grill and place tray with cauliflower base in the grill for 5minutes

  8. In that time chop up your toppings you will need roughly half a pepper of each colour, half a small onion, 1/4 cup frozen sweetcorn, any toppings you like really

  9. Remove the cooked base when you see it brown and crisp on the edges

  10. Add your grated cheese first, then layer your toppings

  11. Grill in the oven for a further 5mins
