Cauliflower Crust Rainbow Pizza
Ingredients
Crust
- 2 packs cauliflower rice (400g)
- 1 whole egg
- 1 egg yolk
- 1/4 cup nutritional yeast
- 1/2 cup grated mozzarella cheese
- 1/2 cup grated protein cheese (or any grated cheese)
- 1 teaspoon oregano
- 1 teaspoon dried basil
- 1/4 teaspoon fine black pepper
Toppings
- Half a bell pepper of each color
- Half a small onion
- 1/4 cup frozen sweetcorn
- Any additional toppings as desired
Preparation
Preheat oven to 250°C.
Mix all the ingredients well in a mixing bowl.
Place a sheet of baking paper on an oven tray.
Empty the bowl contents into the center of the baking tray.
Pat down using your hands to flatten and form a round base, making it as thin as possible.
Press down with kitchen roll to soak up excess water; you may need 4-6 sheets.
Switch oven to high grill and place the tray with the cauliflower base in the grill for 5 minutes.
While grilling, chop up your toppings: roughly half a pepper of each color, half a small onion, 1/4 cup frozen sweetcorn, and any other toppings you like.
Remove the cooked base when it is brown and crisp on the edges.
Add grated cheese first, then layer your toppings.
Grill in the oven for a further 5 minutes.
