Cinnamon Roll Bread

Ingredients

  • 4 eggs
  • 2 cups almond flour
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 3 tsp cinnamon
  • 2 tbsp applesauce (can sub butter or ghee here)
  • 2 tsp baking powder
  • 2 tbsp nut butter

Cinnamon Sugar Layer

  • 1/2 cup coconut sugar
  • 2 tbsp melted ghee
  • 2 tsp cinnamon

Preparation

  1. Whisk the eggs in a bowl.

  2. Add almond flour, maple syrup, vanilla, cinnamon, applesauce, baking powder, and nut butter to the bowl. Mix well.

  3. Line a loaf pan with parchment paper and pour half of the batter into it.

  4. In a small bowl, combine the ingredients for the cinnamon sugar layer.

  5. Spread half of the cinnamon sugar mixture over the batter in the pan.

  6. Add the remaining batter on top of the cinnamon sugar layer.

  7. Drizzle the rest of the cinnamon sugar mixture on top of the batter.

  8. Bake at 350°F (175°C) for 39-41 minutes.

  9. Allow the bread to cool completely.

  10. Drizzle melted coconut butter or mix powdered sugar with milk for icing, then drizzle it over the cooled bread.

  11. Slice and enjoy!
