Coconut Flour Muffins

Ingredients

  • 6 eggs
  • 1/4c melted grass-fed butter or coconut oil
  • 1/2 cup coconut milk
  • 1/2 cup coconut flour
  • 1/4 tsp baking powder
  • pinch of salt

Preparation

  1. Preheat oven to 350 degrees

  2. Line your muffin tin with parchment paper muffin cups

  3. Whisk eggs and mix in melted coconut oil or butter

  4. Sift in coconut flour, baking powder & salt until blended

  5. Fill the lined muffin tins about halfway. The batter will be thick so just eyeball it

  6. Bake for approximately 30 minutes or until the muffins are set and edges begin to become golden brown.Enjoy
