easy snickerdoodle cookies

Ingredients

  • * 1 tablespoons ground flaxseed
  • * 2.5 tablespoons water
  • * 1 cup vegan butter (we recommend our vegan block!)
  • * 1 1/3 cups coconut sugar
  • * 1 tablespoon pure vanilla extract
  • * 1 1/2 cups all purpose flour
  • * 1 can chickpeas
  • * 1 teaspoon baking powder
  • * 1 1/2 teaspoons ground cinnamon
  • * 1/2 teaspoon salt
  • * 1/2 cup coconut sugar

Preparation

  1. Preheat the oven to 375 degrees

  2. Simply begin by making your flax egg (mix it with water in a small bowl until it has thickened)

  3. In a separate bowl, combine the sugar and cinnamon and stir until mixed, and seperately mix the melted vegan butter and coconut sugar

  4. Once all combined, mix in the flax egg and vanilla

  5. Finally, add this mixture to a blender along with your chickpeas, and set this aside once done

  6. In a medium sized bowl, add flour, baking powder, cinnamon, and salt to mix

  7. Add the dry and wet ingredients together until a thick dough is crated

  8. Start rolling your cookies by shaping them into balls, roll them into your cinnamon-sugar combination you made earlier, and then bake for 15 minutes
