Garden Pizza Pinwheels
Ingredients
- 1 cup warm water
- 1 tbsp (or envelope) rapid rise yeast
- 2 cup all-purpose flour
- 1+1 tbsp olive oil
- 1 tbsp sugar
- a pinch of salt
- 1 tbsp cornmeal
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp dried chili flakes (optional)
Preparation
Prepare the dough by mixing together warm water and yeast in a large bowl
Let sit for 10 mins until a foam skin appears
Using a stand mixer with the dough hook attachment, add remaining dough ingredients and mix on medium for 5 mins mix or knead by hand on a floured surface for 7-8 mins until dough becomes stretchy adding more flour if needed
Cover dough ball with a damp tea towel and let rise for at least 1 hour in a greased bowl
Meanwhile, prepare filling ingredients
Filling ingredients: 4 large handfuls of kale, chopped, 1/4 cup green onions, sliced, 1/2 cup bell pepper, chopped, 2 tbsp fresh basil, loosely chopped, 3/4 cup of pizza sauce + more for dipping, 3/4 cup shredded vegan mozzarella (optional).
Once dough is ready, lay out on a floured surface and roll into a large rectangle. Top with pizza sauce, kale, green onions, peppers, fresh basil and cheese. Starting from one long side, roll up dough to create a log. Cut log into 2 inch pieces and place on a parchment lined baking sheet. Bake pinwheels in a preheated oven at 425 degrees F for 16-18 mins. Serve with pizza sauce
If freezing, do not bake. Place pinwheels on a parchment lined baking sheet and freeze until solid. Store in an airtight container for up to 1 month. Bake frozen pinwheels for an additional 3-5 minutes
