Gluten Free Bread

Ingredients

  • 400g wholegrain rice flour or other gluten free flour
  • 100gr flaxseed flour
  • 300gr pure water or herbal infusion
  • 25gr fresh or dry yeast - 1/2 tablespoon sea salt
  • - 1 tablespoon coconut sugar - 2 tablespoon virgin olive oil

Preparation

  1. Start by collecting all the ingredients

  2. Measure the water and if it’s cold, partly mix warm water to reach about your body temperature (about 40 degrees of celsius)

  3. Add fresh or dry yeast into hand warm water, mix it thoroughly

  4. Then add the coconut sugar to activate the yeast

  5. Meanwhile, measure the flour and sea salt , start adding flour slowly & mixing it with wooden spoon till your dough is forming

  6. When you feel it's getting more tight, is time to add olive oil (if you prefer without olive oil it works too)

  7. Add more flour till your dough isn’t absorbing more, then place it into a warm place and cover it with towel

  8. Let the dough do it's work and let it rise

  9. After a couple of hours, you should see the difference in the size

  10. Take the dough and add a little more flour (if needed) and shape your bread or use a form to give it shape

  11. Meanwhile oven should be warmed up to 180 degrees of celsius

  12. Now put the bread into the oven and bake it for about 35-45 minutes

  13. At the end check the bottom of the bread, knock it and if you hear hollow sound it's ready to cut

  14. Now look inside, smell the goodness of your baking

  15. Always preferably serve it fresh and warm
