Gluten-Free Stuffed Nutter Butters

Ingredients

  • 1/2 cup nut butter (e.g., Abby's Better Coconut Cashew Butter)
  • 1/4 cup almond milk
  • 1 egg
  • 1 cup all-purpose gluten-free flour
  • 1/4 cup granulated sugar (e.g., coconut sugar)
  • 1/2 tsp baking powder

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, whisk together the nut butter, egg, and almond milk until well combined.

  3. Stir in the gluten-free flour, sugar, and baking powder until a dough forms.

  4. Use a normal-sized cookie scoop or spoon to portion the dough into 11 cookies. Place the cookies on a baking sheet lined with parchment paper.

  5. Lightly grease a fork and use it to press each cookie down, creating the classic Nutter Butter crisscross pattern.

  6. Bake the cookies in the preheated oven for about 8 minutes or until lightly golden brown.

  7. Allow the cookies to cool slightly before filling.

  8. Once cooled, take a spoonful of extra nut butter (such as Abby's Better Coconut Cashew Butter) and spread it on the bottom side of one cookie. Top with another cookie to create a sandwich.

  9. Repeat the process until all cookies are filled.
