Lemon Drizzle

Ingredients

  • 125g sugar (caster or granulated work fine)
  • 100g margarine
  • 280g self-raising flour
  • 1 and 1/2 tsp baking powder
  • 1/2 tsp apple cider vinegar
  • 180g plant milk (I used soya and that worked well)
  • 2 lemons
  • Icing sugar

Preparation

  1. Preheat the oven to 180 degrees and grease and line a loaf tin

  2. Add the margarine and sugar to a mixing bowl. Cream together until combined

  3. Grate both lemons to get their zest and add to the bowl

  4. Measure out the plant milk using a jug. Juice one of the lemons and add to the plant milk. Stir the mixture and set aside

  5. Add the flour and baking powder to the mixing bowl. Pour in the milk and fold the mixture until combined

  6. Quickly add the vinegar and stir in

  7. Pour the mixture into the loaf tin and place in the oven. Cook for 40 minutes or until a skewer comes out clean when poked into the cake

  8. Leave to cool. Once cool, juice the remaining lemon. Add icing sugar to the lemon juice, until your desired consistency of icing is reached. Pour or drizzle onto the cake

  9. Enjoy
