Orange Blossom Olive Oil Cake
Ingredients

- 2.5 cups shredded unpeeled zuchini
- 2 1/3 cups sugar
- 3/4 cup @carapelliusa olive oil
- 4 eggs
- 2/3 cup oat milk
- 1 teaspoon vanilla
- 4 cups flour
- 2.5 teaspoon baking powder
- cream cheese frosting -
- 4 ounces cream cheese
- 2 tablespoons of butter
- 2 tablespoons olive oil
- 1 teaspoon vanilla
- 3 cups powdered sugar
- makes 2 cups of frosting
Preparation
Preheat oven to 350 degrees
Grease three 8 inch round cake pans with olive oil. In a mixing bowl, whisk together sugar and olive oil. Add eggs one at a time and oat milk and vanilla. Mix thoroughly
In a separate bowl add sifted flour, baking soda, and salt. Shred zucchini with a box grater. Combine all ingredients to the wet mixture
Pour into cake pans. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely before frosting
