Orange Blossom Olive Oil Cake

Ingredients

  • 2.5 cups shredded unpeeled zuchini
  • 2 1/3 cups sugar
  • 3/4 cup @carapelliusa olive oil
  • 4 eggs
  • 2/3 cup oat milk
  • 1 teaspoon vanilla
  • 4 cups flour
  • 2.5 teaspoon baking powder
  • cream cheese frosting -
  • 4 ounces cream cheese
  • 2 tablespoons of butter
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla
  • 3 cups powdered sugar
  • makes 2 cups of frosting

Preparation

  1. Preheat oven to 350 degrees

  2. Grease three 8 inch round cake pans with olive oil. In a mixing bowl, whisk together sugar and olive oil. Add eggs one at a time and oat milk and vanilla. Mix thoroughly

  3. In a separate bowl add sifted flour, baking soda, and salt. Shred zucchini with a box grater. Combine all ingredients to the wet mixture

  4. Pour into cake pans. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool completely before frosting
