Skillet Chocolate Brownie

Ingredients

  • 3/4 cup non dairy yogurt
  • 1/4 cup raw tahini or cashew butter
  • 1/2 cup coconut sugar
  • 3/4 cup fine oat flour
  • 1/4 cup cacao powder
  • 1 tsp baking soda
  • 1 tbsp tapioca starch or corn starch
  • 1/4 cup non dairy chocolate chips
  • 2 Tbsp chopped non dairy chocolate bar or extra chocolate chips, optional
  • Handful vegan marshmallows, optional

Preparation

  1. Preheat oven to 350 degrees

  2. Oil a 6” cast iron skillet

  3. In a medium bowl mix the yogurt, tahini or cashew butter and coconut sugar

  4. Add oat flour, cacao powder, baking soda, starch and chocolate chips and mix until just combined

  5. Using a spatula spread batter evenly in oiled skillet

  6. Bake for 11 minutes, remove from oven and top with extra chopped chocolate bar or chips + plant based marshmallows

  7. Return to the oven for 3-4 additional minutes

  8. Remove, cool + enjoy
