Slimming World Friendly Greek Moussaka

Ingredients

Meat sauce

  • 500g 10% lamb mince (fat drained) or 5% beef mince for syn-free
  • 2 onions, diced
  • 2 garlic cloves, minced
  • 1 tin chopped tomatoes (400g) or 400g passata
  • 2 tbsp tomato purée
  • Salt and black pepper
  • 1/4 tsp cinnamon
  • 1/2 tsp allspice or mixed spice
  • 1 tbsp dried oregano
  • 1 tbsp @mrvikkis Fajita Seasoning

Layers

  • 2 aubergines, sliced
  • 1 large potato, thinly sliced

Topping

  • 300g 0% fat Greek yoghurt
  • 2 eggs
  • 1/4 tsp ground nutmeg

Finish

  • 60g grated cheddar
  • Pinch of oregano

Preparation

  1. Brown the mince in a pan, then add onions and garlic. Stir in chopped tomatoes or passata, tomato purée, spices, and fajita seasoning. Simmer until thick and rich.

  2. Fry aubergine slices in low-calorie spray until golden. Set aside.

  3. Parboil sliced potato until just tender. Drain and set aside.

  4. Whisk yoghurt, eggs, and nutmeg together until smooth.

  5. In a baking dish, layer half the aubergines, half the meat sauce, all the potatoes, remaining meat sauce, remaining aubergines. Pour over yoghurt topping.

  6. Sprinkle with grated cheddar and oregano.

  7. Bake at 180°C for 40 minutes until golden and bubbling.
