Smoked Paprika Tofu & Veggies

Ingredients

  • 1 cup brown rice (uncooked)
  • 450g firm tofu (cubed)
  • 1 red onion (roughly chopped)
  • 1 red capsicum (diced large)
  • 4 cups beans (trimmed)
  • 1 bunch silverbeet (chopped including stalks)
  • 2 garlic cloves (minced)
  • 1 lime (juiced)
  • 3 tbsp avocado oil (use balsamic vinegar for oil free version)
  • 1 tbsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

  1. Cook the rice as per packaging directions

  2. Set aside

  3. Preheat oven to 450ºf (232ºc) and line a baking tray with baking paper

  4. In a large mixing bowl, add garlic, paprika, thyme, salt, pepper and the avocado oil

  5. Whisk until combined

  6. In a large bowl add the tofu, red onion, capsicum and green beans

  7. Add the sauce mixture and toss well to coat

  8. Transfer to the baking tray

  9. Bake the tofu and veggies for 30 minutes or until cooked

  10. Transfer the stalks of the silverbeet to a steamer and cook for 2 minutes then add the leaves and cook for an addition 2 minutes or until wilted, remove from the heat

  11. Transfer to a bowl and combine in the lime juice

  12. Remove the tofu and veggies from the oven and serve on a bed of rice and a side of wilted silverbeet
