Vegan and Gluten-Free Pumpkin Waffles with Pumpkin Glaze
Ingredients
- 1 cup GF Flour
- 1/2 cup Almond Flour (blanched)
- 2 tbsp Flaxmeal
- 2 tsp Baking Powder
- 1 tsp Pumpkin Spice Seasoning
- 1 cup and 1 Tbsp Soy Milk
- 1 tbsp Apple Cider Vinegar
- 1/2 cup Pumpkin Purée
- 2 tbsp Maple Syrup
- 1 tbsp Coconut Oil (canola or veg oil)
- 1 tsp Vanilla Extract
Topping
- 1/3 cup Pumpkin Purée
- 3 tbsp Maple Syrup
- 1/2 tsp Pumpkin Spice Seasoning
- 1 tbsp Soy Milk
- Pumpkin seeds (optional)
Preparation
Preheat your waffle iron.
Combine soy milk and apple cider vinegar to create vegan buttermilk. Set aside.
Add all your dry ingredients to a mixing bowl and combine well.
Add all your wet ingredients and whisk until combined.
Add about 1/4 cup of batter to the waffle maker and cook for 3-4 minutes. If using a mini waffle maker, use 3 tbsp of batter and cook for 2-3 minutes.
