Vegan and Gluten-Free Pumpkin Waffles with Pumpkin Glaze

Ingredients

  • 1 cup GF Flour
  • 1/2 cup Almond Flour (blanched)
  • 2 tbsp Flaxmeal
  • 2 tsp Baking Powder
  • 1 tsp Pumpkin Spice Seasoning
  • 1 cup and 1 Tbsp Soy Milk
  • 1 tbsp Apple Cider Vinegar
  • 1/2 cup Pumpkin Purée
  • 2 tbsp Maple Syrup
  • 1 tbsp Coconut Oil (canola or veg oil)
  • 1 tsp Vanilla Extract

Topping

  • 1/3 cup Pumpkin Purée
  • 3 tbsp Maple Syrup
  • 1/2 tsp Pumpkin Spice Seasoning
  • 1 tbsp Soy Milk
  • Pumpkin seeds (optional)

Preparation

  1. Preheat your waffle iron.

  2. Combine soy milk and apple cider vinegar to create vegan buttermilk. Set aside.

  3. Add all your dry ingredients to a mixing bowl and combine well.

  4. Add all your wet ingredients and whisk until combined.

  5. Add about 1/4 cup of batter to the waffle maker and cook for 3-4 minutes. If using a mini waffle maker, use 3 tbsp of batter and cook for 2-3 minutes.
