Vegan Banana Cinnamon Charcoal Pancakes

Ingredients

Dry

  • 215 g all-purpose flour
  • 10 g baking powder
  • 2 tbsp raw cane sugar
  • a pinch of salt
  • 1/4 tsp cinnamon

Wet

  • 1 ripe banana, mashed
  • 300 ml plant-based milk
  • 1 tbsp apple cider vinegar
  • 1 tbsp vanilla extract

Additives

  • activated charcoal powder

Preparation

  1. In a large bowl, add the first 5 ingredients and whisk well.

  2. In a small bowl, add the banana, milk, vinegar and vanilla. Whisk well.

  3. Pour the liquids over the dry ingredients and whisk well to incorporate everything.

  4. Heat a nonstick pan.

  5. Cook 2 pancakes plain for about 1 minute per side.

  6. Add a little charcoal powder to the batter after every 2 pancakes, about 1/8 teaspoon at a time, to achieve the ombre effect.

Tips

  1. This recipe makes about 14 medium-sized pancakes.

  2. Serve with protein spread and pomegranate for enhanced flavor.
