Vegan Banana Cinnamon Charcoal Pancakes
Ingredients
Dry
- 215 g all-purpose flour
- 10 g baking powder
- 2 tbsp raw cane sugar
- a pinch of salt
- 1/4 tsp cinnamon
Wet
- 1 ripe banana, mashed
- 300 ml plant-based milk
- 1 tbsp apple cider vinegar
- 1 tbsp vanilla extract
Additives
- activated charcoal powder
Preparation
In a large bowl, add the first 5 ingredients and whisk well.
In a small bowl, add the banana, milk, vinegar and vanilla. Whisk well.
Pour the liquids over the dry ingredients and whisk well to incorporate everything.
Heat a nonstick pan.
Cook 2 pancakes plain for about 1 minute per side.
Add a little charcoal powder to the batter after every 2 pancakes, about 1/8 teaspoon at a time, to achieve the ombre effect.
Tips
This recipe makes about 14 medium-sized pancakes.
Serve with protein spread and pomegranate for enhanced flavor.
