Vegan Chipotle Pizza with Fresh Vegetables
Ingredients
- 1/4 cup tomato paste
- 1/2 cup vegetable broth
- 1/8 cup cashews
- 1 Tbsp taco seasoning
- 1 tsp smoked paprika
- chili powder, to taste
- salt, to taste
- 1 box simplemills pizza dough
- vegan mozzarella cheese
- vegan cheddar cheese
- black bean, drained and rinsed
- corn, drained and rinsed
- red onion, diced
- bell pepper, diced
- avocado slices
- fresh cilantro
Preparation
Whisk together tomato paste and vegetable broth in a sauce pan.
Add in the cashews, taco seasoning, smoked paprika, chili powder, and salt.
Heat on medium until it starts to simmer.
Remove from heat and let it cool.
Preheat oven to 350° and line 1-2 pizza pans with parchment paper.
Follow the instructions on the box to prepare the crust.
Blend the cooled tomato sauce until smooth.
Top 1/2 baked pizza crust with sauce, cheese, black beans, corn, red onion, and bell pepper.
Bake for 15-20 more minutes.
Top with fresh cilantro and avocado slices.

Notes
You can use left over sauce for dipping the crust or freeze for next time
