Vegan Mint Slice Cookies

Ingredients

Biscuit base

  • 30g Peanut Butter (or any nut butter)
  • 20g Chocolate Protein Powder (I used @vivinue coco bliss)
  • 20g Almond Meal
  • 30g Almond Milk
  • 5g Brown Rice Syrup
  • 1/2 tsp Baking Soda

Mint cream

  • 15g Coconut Flour
  • 50g Coconut Cream
  • 1/2 tsp Peppermint Extract

Chocolate coating

  • 50g Dark Chocolate
  • 2 tsp Coconut Oil

Preparation

  1. Preheat oven to 180°C

  2. In a bowl combine all the ingredients for the biscuits and mix until a dough forms.

  3. Form cookie shapes from the dough and place on a lined baking tray. Bake for around 15-20 minutes.

  4. Once cookies have cooked put them in the fridge to cool.

  5. Make the mint cream by mixing the coconut flour with the coconut cream and peppermint extract.

  6. Once the cookies have cooled completely place a small amount of the mint cream on each cookie and mould it to shape so that it’s smooth and even. Put back in the fridge.

  7. Melt the dark chocolate and coconut oil together and coat cooled cookies. Leave in the fridge for at least half an hour for the chocolate to set.

  8. Keep stored in the fridge for 5 days
