Vegan Passion Fruit Entremet Dessert

Ingredients

Mousse

  • 150g coconut whipping cream
  • 1/2 tsp agar agar powder
  • 35g sugar of choice
  • 150g dairy free white chocolate
  • 175g whipped coconut cream

Glaze

  • 80g passion fruit juice
  • 135g sugar of choice
  • 135g corn syrup
  • 90g condensed coconut milk
  • 1 tsp agar agar powder
  • 115g dairy free white chocolate

Passion fruit jelly

  • 150g passion fruit
  • 45g sugar of choice
  • 1/2 tsp agar agar powder

Passion fruit custard

  • 100g passion fruit
  • 60g sugar of choice
  • 15g cornstarch
  • 45g coconut custard

Cake

  • 150g all purpose flour
  • 1g baking powder
  • 0.5g baking soda
  • 1 passion fruit pulp
  • 85g dairy free butter
  • 65g sugar of choice
  • 65g dairy free yogurt
  • 125g soy milk
  • 1 tsp vanilla extract

Preparation

Mousse

  1. Bring 150g coconut cream to a boil, add in agar powder and cook until dissolved, whisking constantly

  2. Pour hot cream over the white chocolate and whisk until smooth

  3. Allow mixture to cool to room temperature

  4. Add in the 175g whipped coconut cream and mix until smooth

Glaze

  1. In a saucepan, add the passion fruit juice and sugar and heat over medium-low heat, stirring occasionally

  2. When mixture begins to simmer, add the condensed milk, corn syrup, and agar powder

  3. Keep stirring until agar completely dissolves

  4. Take it off the heat, and whisk in white chocolate until well-mixed

  5. Pass the glaze through a fine strainer to remove any lumps

  6. Leave the glaze to cool completely

Passion fruit jelly

  1. Combine passion fruit, sugar, and agar agar in a saucepan

  2. Heat until agar dissolves, stirring constantly

  3. Pour into a mold and cool until set

Passion fruit custard

  1. Mix cornstarch and sugar with passion fruit puree

  2. Add coconut custard and heat in a saucepan until thickened, stirring constantly

  3. Cool the mixture before using

Cake

  1. Preheat oven to appropriate temperature

  2. Cream dairy free butter and sugar until light and fluffy

  3. Add dairy free yogurt, soy milk, vanilla extract, and passion fruit pulp, mixing well

  4. Sift together flour, baking powder, and baking soda, then fold into wet ingredients

  5. Bake in a prepared pan until a toothpick comes out clean

  6. Allow cake to cool completely

Assembly

  1. Prepare a mold and layer the components starting with cake or sable base, followed by jelly, custard, mousse, and finish with glaze

  2. Chill the assembled entremet until firm

  3. Unmold and serve chilled
