Vegan Spinach-Cheese Pie
Ingredients
- 180g flour
- 125g margarine at room temperature
- 2,5tbsp cold water
- salt and pepper
- 200g tofu or vegan chicken pieces
- 1 small red onion
- 1-2tbsp cornstarch
- 50ml oatcream(cooking)
- salt and pepper
Preparation
To make the base i mixed together the flour and salt. Then added the room temperature margarine (cut into cubes) and mixed with my hands until a crumble began to form. Added the cold water and mixed until a dough was formed. Place that in the fridge for 30 minutes
Preheated the oven to 200C.Greased a baking form with some oil. Pressed the dough into the baking form to make the crust (press until even and the sides are covered). Poke holes in the crust with a fork. Pre-bake in the oven for 10-12 minutes
In a frying pan, fry the diced red onion and vegan chicken pieces until crispy. Then added the frozen spinach and allowed to heat until the frozen spinach had begun to defrost. Seasoned with salt and pepper
If there is alot of water from the spinach, drain some of the water. Then add the 1-2tbsp cornstarch and oat cooking cream. Mix until combined.et sit for 5-10 minutes
Pour into the prebaked pie crust. Add the vegan cheese dip on top. Then bake in the oven again for around 30-35 minutes. Covering with foil after half the time
Allow to sit and settle in room temperature for 20-30 minutes before serving
