Vegan Sun-Dried Tomato Pasta Bake

Ingredients

  • 1 jar sun dried tomatoes
  • 3 cups of pasta
  • 2 cups vegan grated cheese
  • 5 cloves garlic
  • 1 red onion
  • 1 jar of Garlic Passata
  • 150ml vegan cream
  • 2 Tbsp Nutritional Yeast
  • 1 Tsp Chives
  • 1 Tsp Dried parsley
  • 1 Tbsp smoked paprika
  • 1 Tbsp vegan butter
  • Salt pepper

Preparation

  1. Grab a frying pan or skillet and fry the onion for 3-4 minutes with the vegan butter then stir in the garlic and fry for 30 seconds.

  2. Add the chives and parsley and combine well then add the passata and mix well before adding the cream and letting it simmer for 5 minutes.

  3. Add the paprika, nutritional yeast, and 1 cup of the vegan cheese and stir until the cheese melts then add half of the jar of sun dried tomatoes and stir.

  4. Cook the pasta according to packet instructions and then add it to the sauce and mix well so all pasta is coated.

  5. Add the mixture to a heat-proof dish or leave it in the skillet and add the rest of the vegan cheese on top and some more chives.

  6. Bake in the oven for 15-20 minutes at 200°C or until the cheese has melted and the pasta has gone crunchy on the outside.
