Zucchini Paleo Bread

Ingredients

  • 1 1/2c almond meal
  • 3/4c arrowroot
  • 1/2tsp sea salt
  • 1/2 tsp baking soda
  • 5 eggs
  • 1 1/2 tsp apple cider vinegar
  • 1/3c pitted olives (sliced)
  • 3/4c grated zucchini
  • 1/3c sundried tomatoes

Preparation

  1. mix all of the dry ingredients together;

  2. in a different bowl mix the eggs and all other ingredients

  3. combine ingredients, mix well, pour into loaf tin;

  4. sprinkle pumpkin seeds on top, place in the over for 35 minutes on 320 degrees;

  5. cool for 5 minutes, and enjoy
