Rainbow Bbq Jackfruit Lunch Bowl

Ingredients

  • 1 packet @tmrwfoods Smokey BBQ protein shreds
  • Corn
  • Celery, shaved
  • Purple cauliflower, chopped, raw
  • Red bell pepper, chopped
  • Carrot, grated
  • Fresh cilantro
  • 1 1/2 cup @primalkitchenfoods vegan mayo
  • 1/4-1/2 cup non-dairy milk - any unsweetened original flavor
  • 1 1/2 tsp apple cider vinegar
  • 3 cloves garlic - crushed
  • 1/2 tbs dried parsley
  • 1 tsp dried dill
  • 1 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper to taste

Preparation

  1. Prepare your veggies. For the celery, make thin ribbons using your veggie peeler, then drop into a bowl of water - this creates those beautiful curls!

  2. For the dressing, combine all dressing ingredients in a bowl and whisk thoroughly. Set aside.

  3. Prepare the BBQ protein shreds according to the package instructions.

  4. Assemble the bowl by adding all the separate ingredients into a bowl.

  5. Serve with the creamy ranch dressing for a delicious BBQ experience!
