Rainbow Bbq Jackfruit Lunch Bowl
Ingredients
- 1 packet @tmrwfoods Smokey BBQ protein shreds
- Corn
- Celery, shaved
- Purple cauliflower, chopped, raw
- Red bell pepper, chopped
- Carrot, grated
- Fresh cilantro
- 1 1/2 cup @primalkitchenfoods vegan mayo
- 1/4-1/2 cup non-dairy milk - any unsweetened original flavor
- 1 1/2 tsp apple cider vinegar
- 3 cloves garlic - crushed
- 1/2 tbs dried parsley
- 1 tsp dried dill
- 1 tsp onion powder
- 1/4 tsp paprika
- Salt and pepper to taste
Preparation
Prepare your veggies. For the celery, make thin ribbons using your veggie peeler, then drop into a bowl of water - this creates those beautiful curls!
For the dressing, combine all dressing ingredients in a bowl and whisk thoroughly. Set aside.
Prepare the BBQ protein shreds according to the package instructions.
Assemble the bowl by adding all the separate ingredients into a bowl.
Serve with the creamy ranch dressing for a delicious BBQ experience!
