Stuffed Aubergine Boats

Ingredients

  • olive oil
  • Himalayan salt
  • black pepper
  • coriander
  • garlic
  • black chickpeas
  • red onion
  • coriander

Preparation

  1. Oven on 220C

  2. Sliced in half then scooped out the aubergine

  3. Placed on an oven tray sprinkled with olive oil, Himalayan salt & black pepper

  4. Let aubergines cook in the oven whilst

  5. Chopped the scooped out aubergine bits

  6. Chopped coriander

  7. Opened a tin of black chick peas (protein) no preservatives

  8. In a pan heated 1tbsp olive oil

  9. Added 1tspn chopped garlic (always ready in my fridge)

  10. Added the black chickpeas @bionaorganic

  11. Added the chopped aubergine that was scooped

  12. Seasoned with @schwartz.uk Cajun herb & spice blend (straight from my spice drawer)

  13. Added 1 small chopped red onion

  14. Added chopped coriander (a nice handful of stems gives best flavour)

  15. Remove aubergines from oven

  16. Fill with the chickpea mix prepared above

  17. Add some cottage cheese on the top (can be any cheese or no cheese at all)

  18. Sprinkle black pepper, coriander and chilli flakes

  19. Grill in the oven for 1-2mins

  20. Serve hot
