Blender Apple Pie Coffee Cake Bars
Ingredients
Coffee Cake
- 2 ripe bananas
- 1/3 cup maple syrup
- 2 tbsp flaxseed meal
- 1/2 cup almond flour
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup non-dairy milk
- 1 cup diced apple
Crumble
- 3/4 cup rolled oats
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1 tbsp almond flour
Preparation
Preheat the oven to 350 degrees. Line an 8x10" baking dish with parchment paper.
In a blender, add the bananas, maple syrup, flaxseed meal, almond flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Blitz a few times to incorporate.
Pour in the non-dairy milk and blend until the mixture is creamy.
Spread the batter into the prepared baking dish. Sprinkle the diced apple over the batter and press it down.
In a separate bowl, mix together the rolled oats, maple syrup, cinnamon, and almond flour to make the crumble.
Generously sprinkle the crumble mixture over the batter.
Bake for 30 minutes.
Allow the bars to cool for 5 minutes before cutting into bars.
