Vegan Rice Pudding

Ingredients

  • 1 liter oat milk or any other vegan milk
  • 250g short grain white rice
  • 40-60g coconut sugar (adjust to your sweetness level)
  • 1 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt, or to taste

Preparation

  1. Bring the oat milk along with the rice to boil. Add in the salt, vanilla, coconut sugar and nutmeg into the pot. Stir the ingredients together and let everything simmer. Lower the heat and allow the mixture to cook at a low simmer, stirring often and scratching the bottom in order to prevent the rice from sticking on to the bottom of the pan

  2. Allow the mixture to cook for about 20 minutes, or until it reaches your desired thickness. Finally, just top off your rice pudding with some cinnamon on top and there you have it
