"Beetroot Cashew Coconut Bites"

Ingredients

  • Here's the recipe for 15 bites/Burfis
  • Grate a medium size beetroot (1 cup) and squeeze out its excess juice using your hands. Dry roast in a wok for about 5-7 min. Add dessicated coconut powder and roast them together further for 10 minutes. Roast 3/4 cup of cashews using ghee and grind it into a coarse powder. Mix it in beetroot and coconut mixture and add 3/4 cup of powdered sugar, 1-2 tablespoon ghee, 1 -2 teaspoon of milk to adjust consistency. Mix everything thoroughly and cook further on low flame for about 7 -10 min. Meanwhile, grease a tray/ plate with ghee and keep it aside. Transfer the mixture on that plate and flatten it evenly. Garnish it with dry rose petals, pistachios and dry coconut powder. Let it cool and then cut into small square pieces and enjoy
