Easy Coconut Chickpea Curry
Ingredients
- 1/2 medium onion chopped
- 1 clove of garlic minced
- 1 small piece of ginger (about 1/4 of your thumb)
- 1 can of chickpeas rinsed
- 1/4 cup coconut milk
- 1 cup water
- 1 cup chopped carrots
- 2 tsp nutritional yeast
Spices
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp coriander seeds crushed or 1 tsp coriander powder
- 1 star anise
- 1 tsp black pepper
- 2 tsp curry powder
- 1 tsp veggie bouillon powder
- salt to taste
Preparation
Sauté your onions, garlic and ginger in a little bit of coconut oil or water
When the onions are starting to get soft, add the spices and stir
Next, add in the rest of the ingredients except for the coconut milk and nutritional yeast and let it cook covered for about 5 minutes, this softens the carrots
After, let the stew cook at medium heat uncovered till it is nice and thick. Stir periodically and mash up a few of the chickpeas to thicken up the sauce.
Once the sauce has thickened, add the nutritional yeast and coconut milk and stir it all well
Keep the stew at low for 1-2 minutes, then it is ready to serve
This stew is a perfect companion to rice or even the flat bread recipe I have on this page with a nice fresh salad!
