Greek Inspired Ruote Pasta Salad
Ingredients
- - 200g dried ruote pasta
- - 1 red onion, finely sliced
- - 10 baby tomatoes, halved
- - 1/2 cucumber, chopped
- - 1 green pepper, sliced
- - 100g feta cheese
- - 1 tbsp dried oregano
- Dressing (juice of half a lemon, 1 tsp Dijon mustard, 2 tbsp extra virgin olive oil, 1 tbsp white wine vinegar)
Preparation
Cook the pasta as per the packet instructions, typically 10 minutes in simmering water with a drizzle of olive oil
Finely slice the red onion and place in a small bowl of cold water for 5 minutes to remove some of the sharpness
Chop or slice all other ingredients and add to a large salad bowl
Once cooked, drain and run the pasta under cold running water to cool it down. Add the pasta to the bowl with the other ingredients. Drain and add the onion. ? Mix the dressing and drizzle it, along with the oregano and crumbled feta, over the pasta and salad. Gently toss it all together
