Pasta in Creamy Tomato Sauce

Ingredients

  • 200g penne pasta
  • 200 ml fresh cream
  • 1 parsnip peeled and diced
  • 2 medium tomatoes peeled and diced
  • 2 small or 1 big capsicum/bell peppers medium diced
  • 2 garlic cloves finely chopped
  • 1/3 cup cheddar cheese
  • 1/3 cup pasta water
  • a big pinch of red chilli powder or cayenne pepper (optional)
  • 1/2 tsp nutmeg powder
  • salt and black pepper to taste
  • 2 tsp olive oil
  • freshly chopped sage
  • some freshly chopped parsley for garnishing

Preparation

  1. In a medium saucepan start boiling water with olive oil and salt

  2. Add the penne and boil it till al dente

  3. Strain the pasta using a skimmer or spider and add the parsnip cook till tender

  4. Reserve 1/2 cup of pasta water before straining

  5. In the same saucepan, add olive oil and garlic

  6. Let the garlic turn golden in colour then add the tomatoes

  7. Sauté for about 2 minutes till the tomatoes release water, now add the nutmeg, black pepper, red chilli powder or cayenne pepper

  8. Add the the capsicum or bell peppers and sauté for about 30 seconds

  9. Now add the pasta water and cream, bring it to a boil

  10. Reduce the heat and boil for about 2 minutes and add in the cheese and continue to cook while stirring till you get the thick desired consistency

  11. Add in the parsnip, sage and pasta, stir it well

  12. Garnish with some fresh parsley and cheddar or parmesan cheese

  13. Serve hot and enjoy!!
