The Best Fridge Clean Out Ramen of All Time

Ingredients

  • Sauté 1 large onion (sliced) in 2 tbs coconut oil + 1 tsp salt. Cook for 8 minutes
  • Add a 2” piece of ginger (peeled/minced) + 4-5 cloves garlic (minced). Add 2 celery stalks (thinly sliced on the bias) + 1 large carrot (diced or sliced). Cook for 2 minutes
  • Add 1 tbs curry powder + 1/8 tsp crushed red pepper flake. Cook for 1-2 minutes (careful, don’t let anything burn). Add 4 cups veg broth (low sodium preferred) + 1 can coconut milk + 1 tbs lemon juice + 3 tbs tamari + 1 tbs maple syrup + 2 tsp salt. Bring to boil, reduce to simmer. Simmer for 15 minutes, partially covered

Preparation

  1. Add edamame (1 cup frozen) + kale (4 cups roughly chopped)

  2. When kale is wilted, add 9oz ramen noodles, submerge in liquid, bring to rolling boil turn off heat, cover and let sit for 5 minutes, or until noodles are al dente
