This Easy Chicken Curry

Ingredients

  • 1. chicken thighs & legs -1kg
  • 2. grated coconut - 1/2 a coconut
  • 3. green chillies - 6 nos
  • 4. garlic cloves - 6nos
  • 5. ginger - 1 inch
  • 6. tamarind - small ball
  • 7. onion - 1no
  • 8. finely chopped onion - 1no
  • 9. finely chopped ginger - 1 tbsp
  • 10. finely chopped garlic - 1 tbsp
  • 11. olive oil - 30ml
  • 12. water - 1.5 cup
  • 13. salt to taste
  • 14. finely chopped coriander leaves - 1 tbsp
  • 15. hard boiled egg - 1no

Preparation

  1. Methodology

  2. Season the chicken thighs & legs with salt. Keep aside

  3. Now, grind to a fine paste the coconut, green chillies, ginger, garlic, tamarind & onion

  4. In a heavy bottom pan, heat the olive oil and sauté the finely chopped ginger, garlic & onions till onions turn translucent

  5. Add the finely ground paste & sauté for a while

  6. Add the seasoned chicken and cook for a while

  7. Add 1 and a half cup of water, bring to a boil & simmer for 20 minutes till chicken is cooked

  8. Serve hot, garnished with finely chopped fresh coriander & a halved hard boiled egg
