Chai Spiced Cake Donuts

Ingredients

  • 1/4 cup avocado oil, plus more for greasing
  • 1 chai tea bag
  • 1 cup blanched almond flour
  • 1/2 cup plus 2 tablespoons coconut flour
  • 11/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 11/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 room temperature large eggs
  • 1 room temperature large egg yolk
  • 2/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • optional: melted coconut butter as icing

Preparation

  1. Add 1 cup water to a small saucepan and bring to a boil

  2. Add chai tea bag to a heat-proof mug

  3. When water is boiling, immediately pour over tea bag and place mug in the refrigerator

  4. Steep at least 20 minutes and up to overnight in the fridge (longer for stronger flavor; i suggest overnight)

  5. Preheat oven to 350 degrees f and grease a silicone donut mold with avocado oil (an extra precaution even with the nonstick mold!)

  6. Place mold on a baking sheet

  7. To a large mixing bowl, add almond flour, coconut flour, baking powder, baking soda, sea salt, cinnamon, ginger, nutmeg and cloves

  8. Whisk to incorporate
