Chocolate Raspberry Cups

Ingredients

  • 200g dark chocolate
  • 1 cup frozen raspberries
  • 1/4 cup dessicated coconut
  • 1 tbsp maple syrup
  • 2 tbsp coconut cream
  • 1 tsp vanilla extract

Preparation

  1. Melt dark chocolate

  2. Line a baking tray with cupcake cases

  3. Pour 1 tbsp of melted chocolate into the cases (make sure you save some choc for later )

  4. Use a spoon to line the sides of the cases with chocolate

  5. Put the tray in the freezer to set in the frige (approx 20 mins)

  6. Once set, blend the remaining ingredients for the filling and add approx 1 tbsp of blended mixture into each case

  7. Use the remaining melted chocolate on top to cover the raspberry filling and sprinkle with freeze dried raspberries

  8. Put the tray back into the freezer to set (approx 30 mins)

  9. Then enjoy
