Corn Bread Potpie
Ingredients
- 1- 32oz vegetable broth
- 2 cups broccoli florets
- 2 cups mixed veggies
- 1 small red onion, diced
- 1 1/2 tsp trader joe’s vegan chickenless seasoning salt
- 1/2 tsp pepper
- 1/2 cup cold water
- 1/2 cup cornstarch
- 1- 8.5oz package corn muffin mix
Preparation
Preheat oven to 400
Bring broth to a boil in a large saucepan
Add vegetables and seasonings
Cook until vegetables are crisp
In a small bowl, combine water and cornstarch and sit until smooth
Add to broth mixture and cook for an additional 5 minutes
Carefully, pour mixture into a large baking pan
Prepare corn muffin mix according to package and spoon over mixture
If you want to, add a small can of cream corn to muffin mix and sprinkle cheddar cheese over top***)
Bake in oven for 25 minutes or until cornbread is golden
