Corn Bread Potpie

Ingredients

  • 1- 32oz vegetable broth
  • 2 cups broccoli florets
  • 2 cups mixed veggies
  • 1 small red onion, diced
  • 1 1/2 tsp trader joe’s vegan chickenless seasoning salt
  • 1/2 tsp pepper
  • 1/2 cup cold water
  • 1/2 cup cornstarch
  • 1- 8.5oz package corn muffin mix

Preparation

  1. Preheat oven to 400

  2. Bring broth to a boil in a large saucepan

  3. Add vegetables and seasonings

  4. Cook until vegetables are crisp

  5. In a small bowl, combine water and cornstarch and sit until smooth

  6. Add to broth mixture and cook for an additional 5 minutes

  7. Carefully, pour mixture into a large baking pan

  8. Prepare corn muffin mix according to package and spoon over mixture

  9. If you want to, add a small can of cream corn to muffin mix and sprinkle cheddar cheese over top***)

  10. Bake in oven for 25 minutes or until cornbread is golden
