Creamy Chickpea Tomato Bowl
Ingredients
- 1 red onion
- 2 garlic cloves
- salt
- paprika
- mixed herbs
- 1 can chickpeas
- handful of cherry tomatoes
- lemon
- tahini
- handful of spinach
- seasonings
Preparation
Fry 1 red onion, 2 garlic cloves and salt in a pan until soft and caramelized.
Add paprika and mixed herbs, fry for a minute.
Rinse and drain a can of chickpeas, cut cherry tomatoes in half, then add both to the pan.
Add a squeeze of lemon and stir.
Cook for about 10 minutes until tomatoes are soft and juicy.
Add a drizzle of tahini, a handful of spinach, and more seasonings if necessary; cook until spinach is wilted.
Serve, optionally with half a wholemeal pitta and hummus or sides like steamed vegetables, brown rice, or pasta.
