Creamy Mac No Cheese with Mushroom Bacon

Ingredients

  • 1/2 butternut squash, roasted
  • 1/2 head of cauliflower, roasted
  • 2 garlic cloves
  • 1 tsp vegan “chicken”-style stock/vegetable stock
  • 1 tsp onion powder
  • 1 tsp garlic salt
  • 1 cup cashews, soaked
  • 2 tbsp nutritional yeast
  • 1 cup unsweetened oat milk

Optional add-ins

  • 2 large king oyster mushrooms
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1 tbsp maple syrup
  • 1/2 tsp liquid smoke
  • pepper

Preparation

  1. Roast the butternut squash and cauliflower until tender

  2. Soak the cashews in water until soft

  3. Blend all sauce ingredients in a blender until smooth.

  4. Add salt and pepper to taste.

  5. Optionally, add more nutritional yeast for a cheesier flavor.

  6. Mix the sauce with your favorite cooked pasta.

Optional mushroom bacon

  1. Marinate the king oyster mushrooms in a mixture of soy sauce, olive oil, nutritional yeast, maple syrup, liquid smoke, and pepper.

  2. Pan fry the marinated mushrooms until browned.

  3. Serve with steamed or pan-fried broccoli and enjoy!
