Dill Hummus Cherry Tomato Bites

Ingredients

  • 10-15 cherry tomatoes
  • 1 can chickpeas, rinsed and drained
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • 2 tbsp tahini
  • 2 tbsp fresh dill
  • 1 clove garlic, peeled
  • a pinch of salt & pepper

Preparation

  1. Slice tops off cherry tomatoes, scoop out inside of tomato and reserve

  2. In a food processor, add tomato pulp, chickpeas, lemon juice, olive oil, tahini, dill, salt & pepper

  3. Blend on high until smooth, adding a bit of water if needed

  4. In a piping bag or using a small spoon, fill each tomato with dill hummus and enjoy!?
